Cut the peppers and onion into 1 inch size strips or squares depending on how chunky you like your veg. Fry the prepared veg in a little oil until the peppers and onion have softened slightly. Do not allow to soften too much as you need to retain a little chunk to the finished dish.
Remove the peppers and onion from the pan and add a little more oil. When the oil is hot, stir fry your chicken until cooked through and return the veg to the pan.
Add the sweet and sour sauce and follow the cooking instructions on the jar (some require only warming through).
Once the sauce has finished cooking the dish is ready to enjoy.
Serve immediately onto a bed of long grain rice.
Try replacing the chicken with some battered, chicken nuggets. Cook them in the oven (as per the packet instructions) and serve these on the side of the plate. Its just like the sweet and sour chicken balls you get from your local chinese take away.
